From 1992 to 2019 (when publishing stopped), the USA Family Circle magazine hosted what was basically a presidential bake-off – but in print. Every election cycle, the two potential first ladies submitted their best cookie recipe and readers voted on their favourite one. In 2000, Laura Bush submitted the recipe for her Texas Governor’s Mansion Cowboy Cookies (which this recipe is based on while Tipper Gore put up her Ginger Snaps. Laura’s Cowboy Cookies won by a landslide and have since become Family Circle’s most widely circulated presidential cookie recipe. These cookies are very rich and very good !

Makes 42 large cookies

INGREDIENTS

  • 3 cups plain flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon ground cinnamon
  • 350g butter, softened
  • 1 ½  cups granulated sugar
  • 1 ½ cups light-brown sugar, packed
  • 3 medium/large eggs
  • 1 tablespoon vanilla extract
  • 3 cups chocolate chips (dark chocolate probably best)
  • 3 cups old-fashioned rolled oats
  • 110g coconut chips / flakes
  • 200g chopped pecans

PREPARATION

  1. Preheat oven to 180ºC (350°F)
  2. In a medium bowl, mix together the flour, baking powder, baking soda and cinnamon.
  3. In a separate very large bowl, beat the butter with an electric mixer until creamy. Gradually beat in sugars and mix until thoroughly combined. Add in eggs one at a time, beating after each addition. Mix in vanilla extract.
  4. Add flour mixture and beat on low until just combined. Stir in chocolate chips, oats, coconut, and pecans.
  5. Drop dough in 1/4 cup portions 3 inches apart onto ungreased baking sheets.
  6. Bake 15-17 minutes, rotating sheets halfway through. Cookie edges will be lightly browned. Remove to a wire rack to cool and harden.
