This is a flavour bomb and takes very little effort. Went down a storm at lunchtime today !!
1 small / medium red onion chopped finely
4 large Tbsp. butter
Generous 2 cm piece fresh ginger, peeled, and chopped finely
3 medium size tomatoes cut into 2 cm pieces or the equivalent in cherry tomatoes cut in half
2 and a half Tbsp. regular soy sauce
Toasted country-style bread
- Heat the butter in a large frying pan over low / medium heat. Add onion and ginger and cook, stirring often, until the onion softens, takes about 5 minutes. You want to gently stew the mixture in the butter rather than fry it
- Add the tomatoes and cook, turning gently with a spoon, until juicy and just warmed through, about 3 – 4 minutes. Add soy sauce and gently stir to combine.
- Serve in shallow dishes with toast
