Lovely curry just need a little time to marinade the fish at the beginning. A sort of ceviche meets coconut curry event.
Ingredients
- 1 lime juice of
- 1 tsp ground turmeric
- A pinch of hot chili powder
- 400 – 600g skinless firm white fish fillet cut into large chunks
Spice mix
- 2 pods cardamom opened and use seeds only
- 1 tsp black peppercorns
- 2 tsp ground coriander
Rest of Ingredients
- 1 – 4 red or green chillies roughly chopped remove seeds if you want a more mild curry
- 3 cm chunk of fresh ginger, chopped
- 2 large cloves of fresh garlic, chopped
- groundnut or corn oil
- 2 medium onions, finely sliced
- 1 tbsp black mustard seeds
- 400 or 420g tomato pulp
- 100g creamed coconut chopped
- fish stock cube 1
Method
- STEP 1
Mix the lime juice, ground coriander, turmeric and chilli powder in a bowl with a pinch of salt. Add the fish pieces and carefully toss in the marinade. Cover and chill for about an hour.
- STEP 2
Toast the cardamom seeds and black peppercorns in a dry frying pan for 2 to 3 minutes until starting to smell fragrant. Tip into a spice grinder and blend to a powder. Add the ground coriander and put the spice mix to one side for later.
- STEP 3
Put the chillies, ginger and garlic in a small blender with about 1 tbsp water blend until you make a paste.
- STEP 4
Heat a little oil in a large frying pan and fry the paste for a minute. Add the spice mix, fry for another minute, then add the onion and mustard seeds. Fry gently until the onion is soft, about 20 minutes. Add the tomatoes, creamed coconut and crumbled stock cube. Stir and simmer until the creamed coconut has melted into the sauce.
- STEP 5
Drain the marinade from the fish and add the marinade to the sauce. Stir in and bring the sauce back to a gentle boil. Then add the fish pieces to the sauce, tucking them into the sauce. Gently poach for 5 minutes until the fish is just cooked and starting to flake. Taste and add salt and pepper if required. Serve with steamed rice or naan bread.
