12 Quail Eggs
Pot of lumpfish roe
- First thing you need to do is check for cracked eggs.
- Then soak your eggs in warm water for a few minutes and clean.
- Place your eggs in a pot and cover eggs with 1/2 water and 1/2 white vinegar.
- The vinegar makes the shells soft and easy to peel.
- Once the liquid just starts to boil, start timing for 5 minutes.
- Put the eggs into a few changes of cold water to cool them down when the boiling time is up.
- Once cooled start peeling, rinse and allowed to dry on a paper towel. Store in Refrigerator until ready to use.
- When ready to prepare cut in half lengthways and put a little caviar on top.
This method of boiling in half vinegar / half water slightly dissolves the shells and makes peeling them much easier than usual
