- 1 leg of goat
- 1/2 cup lime juice
- 1/2 cup wine red or white or whatever you have
- 1 tablespoon black pepper
- 1 tablespoon lemon pepper /or a squeeze of lemon juice
- 1 – 2 tablespoon rosemary
- Any other seasonings / herbs to taste
- Remove bone from the leg, keeping the meat in one piece.
- Place the meat in a large zip-lock bag, add lime juice and wine and marinate for 1-2 hours
- Take the meat out of the zip lock bag (save the marinade) and put the meat onto a large piece of heavy duty foil.
- Sprinkle both sides of roast and with the black pepper, lemon pepper, rosemary and any other herbs or seasonings you are using.
- Fold the meat in half, pull up the aluminium foil to form a bowl shape around the meat, add marinade from the zip lock bag and then wrap the meat and marinade tightly in the foil,
- Place a baking rack in or on top of a roasting pan. Put the foil wrapped pack on the rack and put into a pre heated and cook at 180 degree for 1 hour.
- Turn the oven down to 140 degree continue cooking for about 4 hours.
- 40 minutes before serving punch 4-5 holes in foil to let the juices drain into the roasting pan
- 20 minutes before serving take the roasting pan and goat out of the oven
- Put the goat , in the foil, to rest in warm place
- Use the roasting pan juices to make a sauce / gravy
- Carve the roast just before serving it will be very tender.
- Excellent really easy recipe for Goat. Particularly good with Maria’s goat !
