Granola delivers so much more flavour than a simple muesli. There are loads of Granola recipes online. This is Ben’s version, developed for maximum simplicity and taste. Serve with Greek yoghurt (at room temperature) and honey.
Ingredients:
Granola base:
- 1 kg oats (rolled, flakes)
- 100ml neutral cooking oil (e.g. corn oil but you can use olive oil for a unique flavour)
- 200ml water
- 100-200g soft brown sugar (to taste): you can make it sugar free if you prefer, but it takes longer to get the Maillard reaction (non-enzymic browning)
Selection of nuts and dried fruits
Method:
- Mix all granola base ingredients together.
- Spread in a non-stick, oiled baking tray.
- Bake at 180°C for 30-40 minutes, or until evenly toasted;
- Half way through use a spatula to move the mix around, and stop it burning at the edges
- Toast a selection of nuts e.g hazel, almond, walnut in a dry frying pan. Smaller nuts (e,g. pine nuts) and smaller pieces take less time than whole nuts
- Add to the granola base, along with a selection of dried fruit to taste
- Allow to cool completely before packing away in an airtight container.
