- 300g Canned sweet con
- 1 egg, lightly beaten
- 50g Plain Flour
- Fat or corn oil
- Drain the sweet corn. Put it into a container and blitz with a magimix blender stick until creamy.
- Mix together with the egg and the flour.
- Drop dessertspoonfuls into hot shallow fat / corn oil , turn once and fry until golden.
I tried a lot of recipes to get this dish right and the one above came from the side of a sweet corn tin and was the most simple and the best.
