Corn Fritters

Recipe by
  • 300g Canned sweet con
  • 1 egg, lightly beaten
  • 50g Plain Flour
  • Fat or corn oil
  1. Drain the sweet corn. Put it into a container and blitz with a magimix blender stick until creamy.
  2. Mix together with the egg and the  flour.
  3. Drop dessertspoonfuls into hot shallow fat / corn oil , turn once and fry until golden.

I tried a lot of recipes to get this dish right and the one above came from the side of a sweet corn tin and was the most simple and the best.
